Ingredients:

  • 2 slices whole grain toast

  • 1 avocado

  • 2 eggs

  • 1.5 oz micro arugula

  • Salt and pepper to taste


Recipe:

  1. Start by deciding how you would like to prepare your eggs. For scrambled eggs, whisk both eggs in a mixing bowl and cook until they reach your desired consistency. For soft boiled eggs, boil them for 5 to 7 minutes, with a 7-minute egg nearing a hard-boiled consistency.

  2. Next, cut and mash the avocado, seasoning it with salt and pepper to taste. Toast two slices of whole grain bread until they are golden brown.

  3. To assemble your Avocado Toast Supreme, spread the seasoned, mashed avocado evenly over the two slices of toasted bread. Add a generous handful of micro arugula on top of each slice, and finish by placing your prepared eggs on top of the micro arugula.
